Jennifer's Recommendations

Jennifer, a French native and passionate wine authority, is the inspiration behind FYN’s exceptional wine list. Her recommendations for the current FYN Winter Experience are currently available for delivery with your dining order.

A few words from Jen:

As an apéritif, I recommend one of my hand-crafted cocktails; they’re the perfect marriage of premium spirits, home-made syrups and pressed juices and the ideal way to start your FYN Winter Experience. It wouldn’t be winter without a celebration of brandy – so I’ve created a refreshing, spicy, sweet and savoury cocktail I’ve called ‘gingerbread rooibos’.

Wine pairing

Our kaiseki style starters display many rich wintery flavours and I have chosen Post House Chenin Blanc 2009 to complement these. The wine has developed fantastic complexity and flavour with age and shows remaining persistent acidity that can be paired with all of the various flavours of the three starters.

My red recommendations begin with the light and elegantly silky Kaapzicht Cinsaut 2018; for red wine enthusiasts this wine will pair perfectly with the many flavours in the menu.

For the main courses I suggest a light, vibrant white wine with subtle aromas such as the Lismore “The Age of Grace” Viognier 2018. This expressive handcrafted, barrel-fermented and -aged Viognier is extremely limited since the estate was sadly burnt to the ground last year during the Cape’s fire season. This wine truly is bliss in a glass, especially when paired with fish. If you are choosing meat as your main course, my suggestion is the Vriesenhof Pinotage 2009 – a classic old school Stellenbosch Pinotage that still displays some primary dark fruit, soft white pepper and leather flavours that will complement the earthiness of the dish.

For those who enjoy a sweet sip with dessert, I have selected Thelema Late Harvest Semillon 2015, with typical Semillon characters of honey blossom, citrus and crème brûlée. This luscious late harvest is rich and refreshing, providing a nice sweet parallel to the chocolate gateau.

All FYN wines are stored in our climate controlled wine cellar and handled with love for perfect drinking enjoyment every time. If you happen to receive a bottle that has been affected by cork taint (TCA) please lets us know and we will replace the ‘corked’ wine free of charge. Please keep the wine for us to inspect and return to the winery.
